Do you miss Veg Out? We miss Veg Out!!
In normal circumstances we are very lucky to host Veg Out in the community space every Monday.
Veg Out are a volunteer-run Pop Up Vegan Community Cafe. They cook up delicious nutritious vegan meals and snacks using food that would ordinarily be thrown away, and serve it on a pay-as-you-feel basis. This brilliant scheme tackles food waste, combats loneliness, and promotes community all at the same time! This is what Southampton needs, and exactly what our community space was built for!
In keeping with their ethos, and because we’re all indoors at the moment, they are sharing tips, recipes and more on their facebook page until they are back up-and-running again!

Spinach & Mushroom Vegan Quiche
A combination of silken tofu and trusty ol' chickpea flour. I used 2x packets of silken tofu (I think they were 150g each) + 1/2 cup gram flour + 2tbsp nutritional yeast + 1tbsp kala namak + turmeric powder + garlic powder + onion powder + black pepper + smoked paprika and a bit of thyme, blended together in a food processor.
Cook the mushrooms and spinach together with onions, then pour the filling into the pan with the vegetables (off-heat) and gently fold mixture together and pour onto pie crust. Spice up the filling with whatever you would like, I just love using onion and garlic powder for an umami flavour, but it's not necessary. 😘
Bake for 50 minutes at 180° (or until golden brown) and then leave to cool and set for 20 minutes.
The crust is 2cups flour, 1tbsp sugar, 1/2tsp salt, 1/2 cup margarine (mix these until they're crumbs) and then whisk together 3tbsp cold water + 2tbsp oil and slowly add that into the flour mix until a dough forms. Stick in fridge for at least an hour, then roll out and put into pie tin and put filling straight in. No need to blind bake first! 👍 😘
